Fondant 101 "Bommarito Style"

Bommarito speaks really fast and loves to share, you can guarantee to learn so much in this class.

Bommarito will share 18 plus years experience of how to apply rolled fondant seamlessly with her infamous karate stance technique.

With practice, Bommarito guarantees that with her recommendations, students will obtain a rolled fondant cake with a smooth porcelain-like finish every time.

Students will also learn how to create cascading and swagged fondant drapery.

Other aspects of class include: coloring techniques for that perfect shade of fondant and painting techniques using dust colorings, extracts, sanding sugar and nonpareils to enhance the detail.

The Cupcake Meets the Wedding Cake Designer

Bommarito’s name is synonymous with Wedding Cakes, yet in this class she decides to offer her designs on a smaller canvas…the cupcake.

Students will learn helpful techniques and suggestions for making that perfect cupcake and also learn how to make “Sweet Vanilla Swiss Meringue Butter Cream”.

Then the creative energy will flow in abundance, as Bommarito will share her techniques to create the following designs:

  • Three-dimensional butter cream sunflowers and pansies
  • Three-dimensional bows and ribbon streamers
  • Texturized appearance atop the cupcake
  • Three-dimensional roses with royal icing vine
  • Wild Safari Leopard/Cheetah Pattern

Plus students will learn how to enhance the designs by using food coloring gel paste, sanding sugars and non-pareils.

Gift Package, Ribbons and Bows

This is one of Bommarito’s favorite classes to teach since the ideas shared can be tailored for ALL celebrations…

Bommarito will share ideas on how to make small tiny three-dimensional loop bows for petit fours to large 6 loop bows for larger cakes…the loops will vary from 1/8″ rolled fondant to flat 2″ fondant strips which will enable you to arrange the bows to make a number of different styles of designs.

Students will learn how to make and place the streamers artistically to create a realistic satin appearance.

Bommarito will also demonstrate how to texturize the bows and streamers with various coloring techniques, molds, tools, sparkle dusts, sanding sugars and nonpareils.

Students will also show students how to make 3-dimensional tissue for peaking out of an “opened” box lid.

Bommarito will also introduce an array of design ideas for the gift box itself:

Design ideas include:

  • Black sanded sugar Zebra striping
  • Textured “Antique” appearance
  • Harlequin Quilted Pattern with raised pearls

Bommarito Unveils Her Bag of Tricks

Bommarito will show you how to use various molds, cutters and appliqués and take it one step further to make the embellishments “your own”.

Students will also learn trade secrets on how to create traditional romantic designs, royal icing piped elegant scroll, harlequin quilting patterns and royal icing pearl beading,

Food Network Victory Wedding Cake Design

her techniques on how to re-create the Winning design…

Vintage Luggage Cake

As seen on Food Network…Learn how to create a Vintage Luggage.

Bommarito will first share with students how to apply fondant seamlessly and how to texture the fondant for a more realistic appearance.

Each student will then be able to create their own stylized luggage by texturizing, creating embellishments for a handle, lock, corner protectors and brackets by using various molds and gum paste tools.

Bommarito will also share painting techniques for detailing the luggage to give that “vintage” feel.

Antique Book Cake

As seen on the Food Network “Sugar Rush” – Double Take Episode, learn how to create antique books with rolled fondant.

Discover how to obtain rich colors to make fondant look like leather, how to sculpt the shape of the book and how to apply fondant seamlessly.

Students will also learn how to create pages in the book and add writing to the book cover.

Detailing techniques will also shown… such as imprinting, rolled fondant letter creating, textured tiles and lustre dust-painting techniques.

This class is guaranteed a “sweet” ending.

Wild Safari Animal Print

This is one of Bommarito’s favorite classes to teach since the ideas shared can be tailored for ALL celebrations…

Bommarito will first share with students how to apply fondant seamlessly and how to texture the fondant for a more realistic appearance.

She will then introduce the texturized Black sanded sugar Zebra striping technique, the shimmering giraffe pattern and bling-bling cheetah pattern.

Students will also learn various coloring techniques using sparkle dusts, sanding sugars and nonpareils.

Glamorous Boutique-Style Shopping Bag

Look like you just stepped out of a high-end boutique in Manhattan with your own stylized Shopping Bag.

Bommarito first will demonstrate how to sculpt cake “just so”…to give an appearance of a boutique-style shopping bag.

Students will then learn how to apply fondant seamlessly and how to detail the shopping bag with a choice of 3 designs:

  1. Harlequin diamond quilted pattern with royal icing pearl beading…Inspired by Designer Coco Chanel
  2. Wild Safari Zebra Striping with sparkling black sanding sugar
  3. Chocolate Fondant Pin-striping created for Sex and the City Cake Challenge.

Students will also learn how to create three-dimensional tissue and handles for the shopping bags.

Elegant Royal Icing Scroll Design Cake

Bommarito will first give her “schpeal” of working with fondant…proper storing, coloring and kneading…and her viewpoint of being a Professional Chef…

Then Bommarito will demonstrate her “karate” stance way of how to apply Rolled Fondant seamlessly with a porcelain-like finish to be used as the blank canvas for your artwork.

Students will artistically paint the cake tiers using coloring techniques with lustre dust and clear vanilla flavoring. Exact color palette of each cake is to be determined by the student.

Then Bommarito will share the “art of using a piping bag” to create an elegant scroll design.

For visual interest, Bommarito will demonstrate how to create sugar drapery swags, a variety of embellishments such as three-dimensional roses, leaves, fleur de lis and an intricate beaded border.

"Sculpted" Elegant Rolled Fondant Romantic Wedding Cake

Bommarito speaks quit fast…so you can guarantee that this class will be filled with lots of information.
Bommarito will share her knowledge and techniques on how to sculpt and carve the top tier of the cake into a hour glass figure.

Bommarito will then share information on how to apply rolled fondant seamlessly onto the cake tier to create a blank canvas for artwork.

Students will then learn how to create an elegant scroll design by simply using rolled fondant, blessed hands and a ball tooler.

For visual interest, Bommarito will also demonstrate how to create both vertical and horizontal sugar drapery swags.

Coloring and painting techniques using lustre dust will also be provided.

Students will see the fruits of their labor in the final assembly of the tiered cake along with small intricate beaded border finishing.

Spring Garden Cake (As Seen on Martha Stewart)

Students will first learn how to create Sweet Vanilla Swiss Meringue Butter Cream.

Bommarito will then share her techniques on how to stack each cake layer for a nice flush appearance and then how to create a smooth buttercream finish.

The class goes one step further and Bommarito will share her 18 years experience of how to apply fondant seamlessly with a porcelain-like finish.

Students will also learn how to make marzipan from scratch and how to color the marzipan for a more realistic appearance.

Bommarito will then share her secrets on how to create the following items:

Three-dimensional marzipan fruits and vegetables (carrots, radishes, rhubbard, potatoes, cabbage, lettuce, tomatoes).

Techniques will be shared on how to create a White picket fence that stands proud and tall to surround entire cake tier

Chocolate cookie crumb soil for the garden will be used as a back-drop for marzipan fruit and vegetables.

Royal Icing Sugar Cookie Decorating

A fun and informative class…ideal for all occasions.

Students will learn tips and techniques on how to make that perfect cookie dough recipe…and then bake the cookies so the desired shape is maintained.

Bommarito will share then provide you with various royal icing recipes and coloring techniques.

Students will then be given a variety of how-to techniques to make the cookies come to life with just a few simple recommendations.

Bommarito will also share ideas regarding piping gel, nonpareils and colored sanding sugars.

Petit Fours

An ideal class for all occasions.

Bommarito will first show you how to cut that perfect square of cake.

Then how to make Sweet Vanilla Swiss Meringue Butter Cream and how to apply to miniature cakes.

Bommarito will then share her recipe on how to make Petit four icing and how to color and glaze for that pristine finish.

Students will then learn a variety of decorating techniques…using rolled fondant, sugar molds, royal icing in a piping bag with various tips, use of cutters and how to create three-dimensional , bows, roses and leaves.
